Greek Style Rice

In Toronto, we have a chain of restaurants found in almost every food court across the city that serves up fast Greek cuisine. It has grown to become one of my favorite take-out options and I generally have a Chicken Souvlaki dinner at least two to three times a month. What makes this take-out option one of my more popular is that it’s pretty healthy. You can’t go wrong with chicken breast, rice, and potatoes. Here is my version of the Greek Style Rice.


  • 1 cup converted rice
  • 4 cups chicken broth
  • 1 tsp. lemon juice
  • ½ tsp. garlic powder
  • 1 cup frozen vegetable mix (carrots, peas, corn, green beans)


  1. Bring chicken broth, lemon juice and garlic powder to a boil.
  2. Add converted rice and frozen vegetable mix.
  3. Boil over medium heat for 15-17 minutes (or as per the directions on the rice packaging).
  4. Drain and serve immediately.

Serve with Greek Style Roast Potatoes and Greek Style Chicken Souvlaki for an authentic Greek dinner.
