Seasoning at each step is key in building the flavors

Shrimp & Asparagus Linguine

Sometimes the most simple ingredients cooked in the most simple fashion create the most unbelievable flavors. This is particularly true for this fresh and healthy Shrimp & Asparagus Linguine dish. What makes this dish one of my favorites is the fact that it’s healthy, easy to prepare, cooks quickly and best of all can be served all together in one dish.

This is one of those meals you can prepare for weeknight company in only 25 minutes and yet still impress.


  • 2 tbsp. olive oil
  • 2 small packages of cherry or grape tomatoes halved (about 40 tomatoes)
  • 4 cloves garlic chopped
  • ½ tsp. crushed red chili flakes
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ cup white wine
  • ½ lb. asparagus trimmed and cut into diagonal 1 in. pieces
  • ½ lb. large uncooked shrimp, peeled and deveined
  • ½ cup fresh basil chopped
  • ¼ cup fresh mint chopped
  • 2 tsp. fresh oregano chopped
  • ½ package of linguine


  1. Bring a pot of salted water to a boil, add linguine and cook until tender but firm (8 to 10 minutes)
  2. Drain pasta and set aside in a large serving bowl
  3. Heat olive oil in a large skillet over medium high heat
  4. Add tomatoes, ¼ tsp. of salt and ¼ tsp. pepper
  5. Cook, stirring occasionally, until softened (4-5 minutes)
  6. Add the crushed red chili flakes and the garlic then cook for about 1 minute
  7. Add the white wine and the asparagus then bring to a boil
  8. Add ¼ tsp. of salt and ¼ tsp. pepper
  9. Simmer for 5-8 minutes until asparagus has softened
  10. Sprinkle shrimp with remaining ½ tsp. of salt and ½ tsp. pepper and then add to the pan
  11. Simmer until shrimp is cooked through and flesh turns pink (about 5-7 minutes)
  12. Turn off heat, add the basil, the mint and the oregano then toss into mixture
  13. Pour entire mixture over pasta and toss to combine

Sprinkle with parmigiano cheese before serving
