Greek Style Chicken Breast / Chicken Souvlaki

In Toronto, we have a chain of restaurants found in almost every food court across the city that serves up fast Greek cuisine. It has grown to become one of my favorite take-out options and I generally have a Chicken Souvlaki dinner at least two to three times a month. What makes this take-out option one of my more popular is that it’s pretty healthy. You can’t go wrong with chicken breast, rice, and potatoes. Here is my version of the Greek Style Chicken which can be cooked as either a full breast, chicken breast strips, or souvlaki style by cubing the chicken and cooking it on skewers.

  • 2 boneless skinless chicken breasts (whole, cut into strips, or chopped into 1″ cubes)
  • ¹⁄³ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tsp. lemon juice
  • 6 cloves of garlic, minced
  • 1 tbsp. dried oregano
  • 1 tsp. salt
  • 1 tsp. black pepper

  1. Combine all of the ingredients except chicken in a bowl.
  2. If you are making the chicken souvlaki style, cut the chicken into 1″ cubes.
  3. Add the chicken to the bowl with other ingredients and toss well to coat the chicken.
  4. Place the chicken in the marinade into the refrigerator for about 2 hours.
  5. Preheat the oven to 400 degrees.
  6. If you are making the chicken souvlaki style, put the chicken onto metal skewers (about 5-6 pieces per skewer)
  7. Place the marinaded chicken on a foil lined pan or rack and bake in the preheated oven for 15-25 minutes until the chicken is cooked safely.
  8. Serve immediately.

Alternatively, this recipe can be cooked over a medium grill or barbeque.
